Chicken Stir-Fry Vegetables

This recipe is a great recipe for using up all your leftover veggies. I personally like to add all the vegetables I have laying in the back of my fridge, chop them up and add them to my stir-fry.

Some veggies that you can add to this recipe are cauliflower, mushrooms, zucchini, chopped up cabbage , asparagus or any other veggies you like

Ingredients

  • 1 medium sized chicken breast or any other boneless chicken
  • 1 to 2 cups of any veggies cut up that you have I used broccoli, carrots, green bell pepper and celery
  • 2 tbsp low sodium soy sauce (you can add more or less depending on your taste)
  • Chilli flakes (optional)

Recipe

  1. Step 1 cut the chicken into small 1 to 2-inch cubes
  2. Cook the chicken on medium heat
  3. Add in 1 tbsp of soy sauce and chilli flakes
  4. Cover the chicken and let it cook
  5. Once the chicken is fully done take it out of the pan (it’s okay if there is some water left in the chicken)
  6. Add the chopped up veggies to the pan that you cooked the chicken in
  7. Add 1 tbsp of soy sauce to the veggies
  8. Once the veggies are fully cooked add in the cooked chicken to the veggies
  9. If the is any water you can wait till it burns, if not turn off the heat and don’t cover the pan
  10. Enjoy

Low Fat Crinkle Cookies

I love crinkle cookies, but the traditional recipe is loaded with calories, fat and sugar. In this recipe, I altered just a few ingredients to make these cookies low fat, low cal and healthier overall. Although these cookies are healthier than traditional cookies, they are not something that you should binge on. Remember that you can have everything in moderation.

Ingredients

  • 1/2 a cup of granulated sugar
  • A dash of salt
  • 1 cup of stevia
  • 1/4 cup of vegetable oil
  • 1/3 of a cup of applesauce
  • 4 eggs
  • 1/2 a tablespoon of vanilla extract
  • 1 cup of unsweetened cocoa powder
  • 2 cups of all purpose flour
  • 1/2 tbsp of baking powder
  • 1/2 cup or up to 1 cup of icing sugar

Recipe

  1. Add the granulated sugar, stevia, applesauce, salt, vegetable oil, eggs and vanilla extract into a mixing bowl and whisk together
  2. In a separate bowl add the flour, cocoa powder and baking powder and mix
  3. Add the wet ingredients to the dry in 3 parts mixing in between each time
  4. Put the batter in the fridge at least 4 hours or overnight. If you are in a rush pop the batter into the freezer for half an hour
  5. Check the dough to see if it sticks to your hands when you try to roll it. If it sticks then let the dough chill for a bit longer.
  6. Preheat the oven to 350°
  7. Form the dough into small balls
  8. Then coat the balls in icing sugar
  9. If the dough starts to get sticky, pop it back into the fridge
  10. Place the coated cookies on a cookie tray and bake for about 10 to 12 minutes depending on the size of your cookies or until a toothpick comes out clean
  11. When the cookies are done take them out of the oven immediately and place on a cooling rack
  12. Enjoy

Freezer instructions

To freeze these balls repeat the same steps as above just don’t roll them into the icing sugar and just place them in an air right container or a zip lock bag and keep them in the freezer for up to 2 months. Once you take them out of the freezer there is no need to defrost them just roll them into the icing sugar and bake.

Peanut Butter Oat Bites

Peanut butter oat bites are a great post workout snack. They are loaded with healthy fats including omega 3s and complex carbs. And are also a good source of dietary fiber.

Recipe

Makes about 14 balls

Ingredients

  • 1 cups quick oats
  • 1 to 2 tablespoons of organic honey depends on your taste (optional)
  • 1 tbsp chia seeds
  • 1 tbsp flaxseeds
  • 1/2 cup of peanut butter and more if the balls are dry
  1. Add the oats, chia seeds, and flaxseeds into a bowl and mix
  2. Add in the peanut butter and honey
  3. Roll in to balls

You can store these in an air tight container in the fridge for upto 1 week

Cocoa Date balls

delicious and easy to make

These date balls are my all time favourite snack. They are made without any added sugar and are packed with healthy fats and protein. Although these date balls are super healthy they taste delicious. The combination of chocolate, nuts and dates makes this recipe a hit every time I make it.

step 1 weigh 100g of dates with seeds taken out, then soak in warm water

Measure 1 cup of almonds and add to a bowl
Measure 1 cup of walnuts and add to the bowl with the almonds
add 1 tbsp of dark cocoa powder
add all the ingredient to a food processor and blend until it turns into a crumb like texture, then drain the water from the dates and add in the dates and blend again. until the batter starts to clump up. Roll into 1 inch balls and serve.

Recipe

Makes about 24 Cocoa Date balls

Ingredients

  • 100 grams of dates without seeds any type
  • 1 cup of walnuts
  • 1 cup of almonds
  • 1 tbsp dark cocoa powder
  • 1 to 2 cups of warm water
  1. Remove seeds from dates
  2. Measure 100g of dates
  3. Soak the dates in 1 to 2 cups of warm water
  4. In a separate bowl. add in 1 cup of almonds and 1 cup off walnuts
  5. Then add 1 tbsp of cocoa powder to the bowl
  6. Blend the cocoa powder, walnuts and almonds in a food processor until it forms a crumb like texture
  7. Drain the water from the dates
  8. Add the dates to the food processor and blend until the batter start to form into a ball
  9. Roll the batter into small balls

You can store the Cocoa Date Balls in the fridge for up-to 2 weeks in an air tight container.
